I made the Jubilee fudge with 3/4 cup honey but still too sweet. Is there something else I can add with the honey?

There is no need to add anything else. Just reduce your honey. You can reduce it even further. Chelsea Jubilee likes it with a quarter to a half a cup of honey. and it makes it taste more like dark chocolate.
