Could you explain soy versus soy lectin and why it matters?

Avoid soy whenever possible. See page 28 of the Master Plan. Limited or trace amounts of soy protein are allowed. Not all soy is a protein. Soy lecithin is not a problem, since it is an emulsifier. A rule of thumb is to make sure it is not soy based where the majority of protein is soy. Soy has been reported to contain phytoestrogens that can cause harm.
